Homemade Pizza Sauce

From: Uruguay



Ingredients for 1-2 pizza

1- med. onion chopped or sliced
1/2 green bell pepper, chopped or sliced
2- Roma tomatoes, chopped
3- small can of tomato sauce
1-bay leaf
salt, pepper, oregano to taste
Optional: Garlic


Directions: 
In a frying pan, on med/high heat, add a good amount of oil, add the onions, green pepper, bay leaf, some salt and pepper. Once the vegetables start getting transparent add the fresh tomatoes and cook for a little more and add the whole can of tomato paste, in the same tomato can add approx. 2 cans ( use the can of tomato sauce to measure) of water to the pan, mix well and lower the heat to med/ low heat and cook for approx. 20 minutes. ad the oregano (as you like), salt and pepper to your taste too. If you like a looser sauce you can add a little more water, also add oil if needed, there should be little pools of oil in the sauce, but again you can leave out the extra oil if you are watching the calories, etc.
Once the sauce is done you are ready to put it on top of the dough, it does not matter if it is hot, but if you want you can always let it cool.



 



Homemade Pizza Dough (from: Uruguay)

INGREDIENTS:

3- cups all purpose flour


2- Tablespoons    (corn, canola, or olive oil)

1-packet of dry yeast

1-teaspoon sugar

1-cup warm water

Salt to taste

*Extra warm water and flour


DIRECTIONS:

In a cup or small bowl combine yeast sugar with the 1 cup of warm water, mix together and let rest for approx. 10 minutes or until yeast rises.
In a large bowl combine the 3 cups of flour and salt, mix well.
Once the yeast has risen add the 2 tablespoons of oil and mix well with hands or mixer add extra warm water to form a soft dough, if the dough gets to wet add some flour, etc.
Knead just enough till it’s all incorporated, don’t over work! Now form into a ball, rub with some oil and place back in the bowl and cover with a clean towel. Let sit until it doubles or triples in size. At this point flour the counter and roll dough with a floured rolling pin to approx. ¼ inch thick dough, as it cooks it will double in height, so if you want thinner crust, roll out thinner, etc.
Spread dough into a large oiled pan, place pizza sauce on top and cook at approx. 350 to 375 degree oven (depending on your oven)
When pizza is almost cooked all the way add mozzarella cheese and finish cooking until the cheese is melted.

Optional: you can also put on top of the cheese… whole green olives or anchovies.
