Homemade Pizza Dough (from: Uruguay)

INGREDIENTS:
3- cups all purpose flour
2- Tablespoons
(corn, canola, or olive oil)
1-packet of dry yeast
1-teaspoon sugar
1-cup warm water
Salt to taste
*Extra warm water and flour
DIRECTIONS:
In a cup or small bowl combine yeast sugar with the 1 cup of warm water, mix together and let rest for approx. 10 minutes or until yeast rises.
In a large bowl combine the 3 cups of flour and salt, mix well.
Once the yeast has risen add the 2 tablespoons of oil and mix well with hands or mixer add extra warm water to form a soft dough, if the dough gets to wet add some flour, etc.
Knead just enough till it’s all incorporated, don’t over work! Now form into a ball, rub with some oil and place back in the bowl and cover with a clean towel. Let sit until it doubles or triples in size. At this point flour the counter and roll dough with a floured rolling pin to approx. ¼ inch thick dough, as it cooks it will double in height, so if you want thinner crust, roll out thinner, etc.
Spread dough into a large oiled pan, place pizza sauce on top and cook at approx. 350 to 375 degree oven (depending on your oven)
When pizza is almost cooked all the way add mozzarella cheese and finish cooking until the cheese is melted.
Optional: you can also put on top of the cheese… whole green olives or anchovies.

DIRECTIONS:
Boil eggs (as many as you like)…. When eggs are cool, peel them, cut them in half, place yolk (yellow) in a bowl and set the whites on a plate.Add salt,pepper, lemon juice to your taste. Add oil as you go mashing the yolks to make a smooth paste. Then carefully spoon in the mixture into the egg whites or you can put the mix in a plastic bag and cut a medium hole and squeeze it into the whites, it’s easier this way. Then put on top of the eggs an olive. Decorate with parsley tomatoes or anything else you like.

EASY APPLE CAKE
INGREDIENTS:

½ TEASPOON BAKING POWDER
A PINCH OF SALT
¼ CUP
OIL (for moister cake add a
little more oil)
2- TEASPOON VANILLA EXTRACT ( you can add more if you like)
MILK (enough to make the batter like cake mix :
not too thick not too liquid)
2 TO 3
APPLES (depends how large and
how much you like.) Slice them like ¼
inch thick.
CINNAMON &
SUGAR (to sprinkle on top of the
apples before baking)
DIRECIONS:
Mix
all dry ingredients together. Then add eggs, vanilla extract, milk and oil with
an electric mixer until well blended.DIRECIONS:
If batter comes out too liquid add some flour.
Next, butter and flour a cake mold. After batter is in the cake mold, place the apple slices on top of mix all around- being careful not to push them into the batter (you can put one layer of apples or two)
Then sprinkle lots of cinnamon and some sugar before putting into oven. (better if you have course sugar, it will not melt as much)
Bake at 325 to 350 for appox. 20 min. or until the tooth pick comes out with just a few little crumbs of cake on it.
NOTE: When the cake is done, don’t worry the top where the apples are is suppose to be a little wet!
